[氣炸鍋食譜] 脆皮雞下髀 Airfryer Crispy

食材
雞錘drumsticks 2隻2 pcs
沙薑粉Dried ginger powder 1茶匙 1 tsp
鹽salt 1/4茶匙 ¼ ts
胡椒粉pepper 1/4茶匙 ¼ ts
蔥spring onion 少量 some
紅蔥頭shallots 半粒 ½ pc
麥芽糖maltose 1湯匙 1 tbsp
昭興酒Shaoxing wine 1茶匙1 tsp
白醋white vinegar 200毫升 200m
紅醋red vinegar 100毫升 100m

作法:
1 :


將沙薑粉,鹽,胡椒粉, 蔥,紅蔥頭醃雞錘 Marinate drumsticks with dried ginger powder, salt, pepper, spring onion and shallots.
2 :


用保鮮紙封好過夜 Wrap drumsticks with plastic wrap, let marinate overnight
3 :


煮勻白醋,紅醋,麥芽糖及紹興酒,待用 Stir and boil white vinegar, red vinegar, maltose and Shaoxing wine.

熱水輕煮雞錘 Boil the drumsticks for short while.
5 :


將雞錘浸醋 Soak drumsticks in vinegar mixture.
6 :


風乾至少都要兩個鐘 Take at least two hours to air dry
7 :


氣炸170度 15分鐘 air fry for 15 minutes at 170 C
8 :


反轉雞錘 Flip over.
9 :


放入氣炸鍋以200度氣炸2分鐘 air fry for 2 minutes at 200 C
