滋補甜品|養生薑汁紅棗糕 Steamed juice sauce and red date cake

薑汁紅棗糕是傳統的養生甜點。薑有「窮人人蔘」之稱,能行氣活血,有強免疫力和紓緩炎症的功效,平時食用也有助抗氧化,可延緩衰老。至於紅棗則能補中益氣、養血安神、調補脾胃等功效。而黑糖的屬性溫補,有益氣、活血散寒的功效。所以這道甜品,對於血液循環欠佳,經常手腳冰冷的女士們,特別有滋補暖身、幫助入眠的功效。不過體質燥熱的人士,則只宜淺嘗。

食材
清水 Water 850毫升/ml
紅棗 Red date 150克/g
黑糖 Brown sugar 50克/g
片糖 Slab sugar 50克/g
薑汁 Ginger juice 5湯匙/tbsp
粘米粉 Rice flour 50克/g
木薯粉 Tapioca starch 250克/g

作法:
1 :


在糕模內塗一層油,方便脫模 Grease a cake mold with oil for easy removal.
2 :


紅棗洗淨,剪開去核 Wash and remove the pits from red dates.
3 :


薑塊磨蓉榨汁 Juice a piece of ginger
4 :
煲滾清水,加入紅棗 Bring water to a boil and add the red dates.
5 :


中火煲20分鐘 Simmer over medium heat for 20 minutes.

加入黑糖及片糖煮溶Add brown sugar and rock sugar and stir until dissolved.
7 :


熄火加蓋焗30分鐘 Off heat. Cover and simmer for 30 minutes.

用手提攪拌器將紅棗打碎 Use a handheld blender to puree the red dates.
9 :


加入薑汁 Add ginger juice.
10 :


將紅棗水過篩,隔去紅棗衣 Strain the red date water to remove any solids.
11 :


將粘米粉及木薯粉拌勻 Mix rice flour and tapioca starch together.
12 :


注入650毫升紅棗水(不夠的話可加清水)拌勻 Add 650ml of red date water to the flour mixture and stir well.

過篩隔去粉粒 Strain the mixture to remove any lumps.

將適量粉漿注入糕模內,份量要足以覆藝糕模底部,整層約3毫米厚 Pour some batter into the cake mold to cover the bottom, about 3mm thick.

放入已煲好滾水的鑊內,隔水蒸4分鐘 Steam over boiling water for 4 minutes with the lid closed.

打開鑊蓋,注入同等份量的粉漿作第二層,同樣蒸4分鐘 Open the lid, pour the same amount of batter for the second layer, and steam for another 4 minutes.

之後不斷重覆,直至注入最後一層的粉漿後,加蓋再蒸8分鐘,讓紅棗糕完全熟透 Repeat the process until the last layer, then cover and steam for 8 more minutes until fully cooked.

放涼後將紅棗糕小心倒在鋪有烘鋪紙的砧板上,以防黏住 Let the red date cake cool and carefully remove it from the mold onto a cutting board lined with parchment paper to prevent sticking.
19 :


用保鮮紙包住刀,取出享用 Use plastic wrap to cover a knife and slice the cake into pieces before serving.
