【甜品食譜】椰汁桃膠珍珠西米露

材料:
珍珠西米 70g
桃膠 30g
水 1000ml(不包括第一次煮西米水份)
冰糖 80-100g(視乎甜度喜好)
鮮奶 400ml
椰漿 250ml
做法:
1. 桃膠用清水浸至少6-8小時(可浸過夜,但最好中途換次水),碗要預大一點,因為會發漲;
2. 桃膠沖水後除掉黑色雜質,瀝水備用;
3. 煲滾一鍋水,放入西米滾後轉小火煲30分鐘,(珍珠西米芯仍然白色未熟透)放在筲箕以水冲走黏液;
4. 煲滾1000ml水,放入(1)桃膠和(2)珍珠西米,滾後轉小火加蓋煲40分鐘(中途最好開煲蓋拌勻一下,以免西米黏底)如西米仍未通透可熄多焗多15-20分鐘;
5. 加入冰糖和鮮奶煮約10分鐘至糖溶(開火時切勿完全冚蓋以免滾瀉,倘若冰糖未溶可熄火後才冚蓋焗至完全溶化),最後倒入椰漿拌勻並開中水火煮滾即可享用。
